Indulge in these irresistible caramel spice cupcakes made with Betty Crocker™ cake mix.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 teaspoon apple pie spice
  • 1 cup packed brown sugar
  • 1/2 cup whipping cream
  • 1/2 cup butter, cut into pieces
  • 3 cups powdered sugar
  • 1/2 teaspoon apple pie spice
  • Apple slices, if desired
Instructions:
  • Preheat oven to 350°F and line 24 regular-size muffin cups with paper baking cups.
  • In a large bowl, use an electric mixer to beat cupcake ingredients on low speed for 30 seconds, then increase to medium speed for 2 minutes, scraping the bowl occasionally. Distribute the batter evenly among muffin cups.
  • Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from pans onto cooling racks. Allow it to cool completely for about 30 minutes.
  • In a 2-quart saucepan, combine brown sugar, whipping cream, and butter. Heat over medium heat, stirring constantly until boiling. Let it boil for 1 minute. Remove from heat and stir in powdered sugar until smooth. Frost cupcakes and sprinkle with 1/2 teaspoon of apple pie spice.
