Caramel-Apple Butter Cheesecake

Indulge in a decadent creamy cheesecake drizzled with caramel sauce for a delectable treat.
Ingredients:
  • 1 1/2 cups gingersnap cookie crumbs
  • 1/4 cup butter or margarine, melted
  • 20 caramels, unwrapped
  • 3/4 cup apple butter
  • 3 packages (8 oz each) cream cheese, softened
  • 1/4 cup sugar
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 3 eggs
  • 30 caramels, unwrapped
  • 1/2 cup half-and-half
Instructions:
  • Preheat the oven to 300°F. Securely wrap the outside of a 9- or 10-inch springform pan with heavy-duty foil. Combine cookie crumbs and melted butter in a small bowl. Press the mixture onto the bottom and 1/2 inch up the sides of the ungreased pan.
  • In a medium microwave-safe bowl, heat 20 caramels and 1/2 cup of apple butter on High for 2 1/2 to 3 minutes, stirring every 30 seconds until melted. Mix in the remaining 1/4 cup of apple butter and let it cool.
  • In a large bowl, use an electric mixer to blend cream cheese, sugar, and flour until smooth and creamy. Gradually beat in eggs one at a time. Set aside 1/2 cup of the batter. Gently fold caramel mixture into the remaining batter, leaving some streaks. Pour this mixture over the crust. Spoon dollops of the reserved batter on top and swirl with a knife for a marbled effect.
  • Bake for 1 hour 15 minutes to 1 hour 25 minutes, or until the center is nearly set with a slight jiggle. Gently slide a metal spatula around the edges of the cheesecake to loosen it from the pan. Turn off the oven and crack the door open at least 4 inches. Allow the cheesecake to rest in the warm oven for 30 minutes, then cool at room temperature for about 2 hours. Refrigerate covered for at least 4 hours or overnight. Run the spatula around the edges one more time, remove the pan sides, and serve the cheesecake on the bottom of the pan.
  • In a 1-quart saucepan, gently melt 30 caramels with half-and-half over low heat, stirring often until smooth. Drizzle the warm caramel sauce over cheesecake slices and enjoy hot or cold.
