Delicious shortcrust pastry perfectly complements warm caramel apples.
Ingredients:
  • 50g unsalted butter, at room temperature
  • 55g (1/4 cup) caster sugar
  • 2 egg yolks
  • 115g (3/4 cup) plain flour
  • 10.40 gm milk
  • 0.63 gm mixed spice
  • 1.25 gm ground cinnamon
  • 6.00 gm icing sugar
  • 6 small Golden Delicious apples
  • 100g unsalted butter, extra
  • 55g (1/4 cup, firmly packed) brown sugar
Instructions:
  • In a bowl, use an electric beater to cream the butter and caster sugar for 3 minutes until pale and creamy. Incorporate the egg yolks. Mix in the flour, milk, mixed spice, and half of the cinnamon. Divide the dough into 2 portions and flatten each into a 10cm disc. Cover with plastic wrap and chill in the fridge for 1 hour until firm.
  • Allow the dough to reach room temperature. Preheat the oven to 180ºC and line 2 large baking trays with non-stick baking paper. Roll out each dough portion between 2 sheets of non-stick baking paper to form a 28cm disc, approximately 1mm thick. Transfer the discs to the trays and chill in the fridge for 15 minutes until firm. Remove the top paper layer and bake for 10-12 minutes until crisp and golden. Let it cool. Mix the icing sugar and remaining cinnamon, then sprinkle over the pastry. Break into shards before serving.
  • Peel, core, and slice the apples. Toss the apples with lemon juice in a large bowl. Heat butter in a non-stick frying pan over medium heat. Cook a quarter of the apples for 2 minutes on each side until tender. Transfer to a plate, cover to keep warm, and repeat with the remaining batches. Add more butter as needed.
  • Melt the rest of the butter in a pan over medium heat. Stir in the brown sugar until it dissolves and the mixture is smooth, about 2 minutes. Slowly add the cream and simmer until the caramel thickens, about 2 minutes. Drizzle the caramel over the apple and serve with pastry.
