Spiced Caramel-Apple Bread Pudding

Apple bread pudding: A comforting dessert with spiced apples and sweet custard.
Ingredients:
  • 1 Granny Smith apple, peeled, chopped
  • 1/2 teaspoon ground cinnamon
  • 8 oz Italian bread, cut into 1-inch cubes
  • 3 eggs
  • 1 1/2 cups milk
  • 1 cup apple cider
  • 1/4 cup packed brown sugar
  • 1 teaspoon vanilla
  • Caramel topping, if desired
Instructions:
  • Coat a 10-inch skillet with cooking spray. Cook apple with 1/4 teaspoon of cinnamon over medium-high heat for about 2 minutes until apple is tender.
  • Coat a 11x7-inch (2-quart) glass baking dish with cooking spray, then combine the apple mixture and bread cubes in the dish.
  • In a medium bowl, whisk together eggs, milk, apple cider, brown sugar, vanilla, nutmeg, and remaining 1/4 teaspoon cinnamon until smooth. Pour the mixture over the bread in the baking dish, cover, and refrigerate for 1 hour.
  • Preheat oven to 350°F. Remove cover from baking dish and bake for 45 to 50 minutes until the top is crisp and golden brown. Serve the warm dish with caramel sauce.
