Caramel-Chocolate Pecan Cookies

Indulge in decadent cookies using Betty Crocker® mix, packed with pecans, caramels, and chocolate.
Ingredients:
  • 2/3 cup pecan halves, toasted
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/2 cup butter, softened
  • 1 egg
  • 24 pecan halves, toasted
  • 1 bag (10 oz) caramels, unwrapped
  • 2 tablespoons whipping cream
  • 2/3 cup semisweet chocolate chips (4 oz)
  • 1/2 teaspoon coarse sea salt
Instructions:
  • Preheat the oven to 375°F. Use a food processor to finely grind 2/3 cup of pecans. In a large bowl, mix together the ground pecans, cookie mix, butter, and egg using an electric mixer until a soft dough forms.
  • Roll the dough into 24 (1-inch) balls and arrange them on an ungreased cookie sheet. Top each ball with a pecan half.
  • Bake for 10 minutes or until golden. Transfer from cookie sheet to cooling rack and allow to cool completely.
  • Microwave caramels and whipping cream in a medium bowl on High for 1 to 2 minutes, stirring every 30 seconds until smooth. Microwave chocolate chips in a small bowl on High for 1 minute, stirring once until smooth. Drizzle caramel and chocolate over cookies, then sprinkle with salt.
