Caramel-Pecan Snappers

Indulgent cookies with decadent chocolate and gooey caramel.
Ingredients:
  • 3/4 cup sugar
  • 1/4 cup shortening
  • 1/4 cup butter or margarine, softened
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 3/4 teaspoon cream of tartar
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup chopped pecans
  • 36 caramels, unwrapped
  • 2 tablespoons milk
  • 1 cup semisweet chocolate chips (6 oz), melted, cooled
Instructions:
  • Preheat your oven to 350°F. In a large bowl, cream together sugar, shortening, butter, vanilla, and egg using an electric mixer or a spoon. Mix in flour, cream of tartar, baking soda, and salt until well combined.
  • Roll dough into 1-inch balls and space them 3 inches apart on an ungreased cookie sheet. Use a greased glass bottom dipped in sugar to gently flatten each ball. Top each cookie with 1 teaspoon of pecans.
  • Bake for 9 to 10 minutes, until just set but not browned. Let cool briefly, then transfer to a cooling rack.
  • Microwave caramels and milk in a small bowl on High for 2 to 3 minutes, stirring every minute until smooth. Drizzle caramel over cookies and sprinkle with chocolate. Let cool completely for about 30 minutes.
