Indulge in a decadent caramel pecan upside-down apple pie bursting with rich apple flavor.
Ingredients:
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1 cup cold shortening
  • 6 tablespoons ice water, or as needed
  • 0.5 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 0.5 cup white sugar
  • 0.5 cup packed brown sugar
  • 0.25 cup water
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 pinch ground nutmeg
  • 0.33333334326744 cup butter
  • 0.5 cup firmly packed brown sugar
  • 1 cup chopped pecans
  • 8 Granny Smith apples - peeled, cored and thinly sliced
Instructions:
  • In a bowl, combine 2 1/2 cups of flour and salt. Use 2 knives or a pastry blender to cut in shortening until the mixture looks like coarse crumbs. Gradually add ice water, 1 tablespoon at a time, while tossing with a fork, until the flour is moistened and dough forms. Be careful not to add excess water. Divide the dough in half and shape into 2 balls. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat your oven to 350 degrees F (175 degrees C), then elegantly line a 9-inch pie pan with wax paper.
  • In a saucepan over medium heat, melt a luxurious 1/2 cup of unsalted butter. Add 3 tablespoons of flour and whisk until a thick paste forms. Throw in 1/4 cup of white sugar, 1/2 cup of brown sugar, 1/4 cup of water, a splash of vanilla extract, and a pinch of cinnamon and nutmeg. Bring this heavenly mixture to a boil. Lower the heat and let it simmer until the filling is slightly thickened, which should take about 3 minutes. Enjoy the fragrant goodness!
  • In a separate saucepan, gently melt 1/3 cup of butter over low heat. Add 1/2 cup of brown sugar and whisk together until smooth for approximately 2 minutes. Then, mix in the pecans.
  • Evenly spread the pecan mixture onto the lined pie pan. Roll out one ball of dough and place it over the pecan mixture. Toss the apples with the filling mixture and pour into the pie plate. Roll out the second ball of dough and place it over the apple filling. Press the edges of the crusts together. Make small slits in the top crust to vent. Place the pie on a foil-lined baking sheet.
  • Bake the pie in the preheated oven until the crust turns a beautiful golden brown, approximately 1 hour.
  • Let the pie cool for 5 to 10 minutes after removing it from the oven. Gently place a serving plate over the pie and flip it over, being cautious of the hot sugar. Remove the waxed paper and let it cool for 1 hour.
