Caramel candy stuffed cookie dough rolled in pecans, a kid-approved delight!
Ingredients:
  • 1 cup butter or margarine, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 teaspoons vanilla extract
  • 2.25 cups all-purpose flour
  • 0.75 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 cup chopped pecans, divided
  • 1 tablespoon white sugar
  • 5 rolls chocolate-covered caramel candies
Instructions:
  • In a large bowl, mix together butter, 1 cup white sugar, and brown sugar until smooth. Add eggs one at a time, then mix in vanilla. Fold in flour, cocoa, and baking soda until well combined. Stir in 1/2 cup of pecans. Chill dough for 1 hour until firm.
  • Preheat the oven to 375°F (190°C) while you mix 1/2 cup of pecans and 1 tablespoon of sugar in a shallow bowl; set aside.
  • Encase each chocolate-coated caramel with 1 tablespoon of cookie dough, shaping it into a ball. Gently coat one side of each ball with the pecan mixture and arrange them on ungreased baking sheets, pecan side up, 2 inches apart.
  • Bake the cookies in the preheated oven for 8 minutes until they look soft. Let them cool on the pans for one minute before transferring to wire racks to cool completely.
