Irresistible caramelized tarte tatin.
Ingredients:
  • 20g butter
  • 4.60 gm olive oil
  • 2 red onions, thickly sliced lengthways
  • 1 garlic clove, thinly sliced
  • 40.00 gm caster sugar
  • 30.00 ml red wine vinegar
  • 2 sheets frozen puff pastry, just thawed
  • 50g goat’s cheese, crumbled
Instructions:
  • Preheat oven to 200°C. In a 20cm ovenproof frying pan, gently melt butter with oil over low heat.
  • Spread the onion and garlic evenly in the pan. Cook with lid partly on for 10 minutes until onions soften. Sprinkle with sugar, drizzle with vinegar, and season. Cook for an additional 3-5 minutes until sugar dissolves and mixture thickens slightly. Remove from heat.
  • Lay 1 pastry sheet on a clean surface, then add the second sheet on top. Trim to a 25cm disc using a sharp knife. Gently place the pastry over the onion mixture in the pan, ensuring the edges are tucked in neatly.
  • Bake in the oven for 20-25 minutes, or until the pastry is golden and puffed. Let it cool in the pan for 5 minutes, then carefully invert the tart onto a serving plate and sprinkle with goat's cheese.
