Irresistible caramelized red onion tarte tatin - a savory twist on a French favorite for your next gathering.
Ingredients:
  • 80g butter
  • 3 red onions, thinly sliced
  • 3 sprigs thyme
  • 40.00 ml red wine vinegar
  • 2 sheets (25 x 25cm) frozen ready-rolled puff pastry, just thawed
  • Goat's cheese, to serve
  • Finely chopped chives, to serve
Instructions:
  • Preheat your oven to 220C. Grease twenty-four mini muffin pans (1 1/2 tablespoon / 30ml capacity) with oil spray and line the bases with baking paper discs.
  • In a large frying pan over medium heat, melt butter until foamy. Add onions, garlic, and thyme. Cook for 20 minutes until tender and golden. Stir in vinegar and sugar, cook for 5 minutes until sauce thickens slightly. Remove from heat, season with salt and pepper, and allow it to cool.
  • Distribute the onion mixture evenly into the muffin holes. Cut pastry discs using a 5cm round cutter. Place a pastry disc over each muffin hole and tuck the edges inside. Bake for 10 minutes until the pastry is golden and puffed. Gently press down the pastry after removing from the oven and let it rest for 5 minutes before serving.
  • Invert the tarts onto a clean surface, then plate them. Top with goat’s curd and sprinkle with chives before serving.
