Indulgent goat cheese and caramelized onion tartlets for a flavor explosion!
Ingredients:
  • 20g butter, plus extra to grease
  • 2 brown onions, halved lengthways, finely sliced
  • 16.00 gm brown sugar
  • 2 sheets frozen puff pastry, partially thawed
  • 40g goat's cheese, crumbled
  • chervil or parsley, to garnish
Instructions:
  • Preheat your oven to 200°C. Grease 12 patty pan moulds with a touch of butter and line the base with baking paper.
  • In a non-stick frying pan over low heat, melt butter and oil. Add onion and cook, stirring occasionally, for 20-25 minutes until onions begin to caramelize. Stir in sugar and cook for 2-3 minutes until golden. Allow to cool. Place 2 teaspoons of onion mixture into each patty pan mould.
  • Cut out 12 circles from the pastry using a 7cm round biscuit cutter. Place a pastry round over the onion mixture, folding over the excess pastry towards the center of the tarts. Bake for 10-15 minutes until the pastry is golden and puffed. Remove the tarts from the molds carefully and let them cool. Serve on a platter, sprinkle with goat's cheese, and top with a bit of chervil or parsley.
