Potato and caramelised onion tart

Ingredients:
  • 2 sheets ready-rolled shortcrust pastry, thawed and cut in half
  • 20g butter
  • 3 onions, sliced
  • 2.00 gm brown sugar
  • 3 small potatoes, thinly sliced
  • 1 tsp fresh thyme leaves
  • salt and cracked black pepper
  • 20g parmesan
  • 4 eggs, lightly beaten
  • 126.25 gm (125mls) cream
Instructions:
  • Prepare the four 12cm diameter removable base tart pans by greasing them with oil spray and lining them with pastry. Trim off any excess pastry and refrigerate the pans for 20 minutes.
  • In a large non-stick frying pan over medium heat, melt the butter. Sauté the onion for 15 minutes. Then, stir in the brown sugar and potatoes and cook for another 10 minutes until caramelised. Season with thyme, salt, and pepper, and let it cool slightly before serving.
  • Preheat the oven to 180°C. Combine parmesan, egg, and cream in a bowl by whisking. Spread the onion mixture evenly among the chilled tart pans, then pour the egg mixture on top. Bake for 20 minutes or until the top is golden and set. Enjoy warm or at room temperature.
