Caramelised pears and dates

A luscious dessert of caramelized pears and dates with creamy Greek yogurt and crunchy walnuts.
Ingredients:
  • 215.00 gm caster sugar
  • 2 ripe Beurre Bosc pears (or Packham pears in WA), peeled, cored, each cut lengthways into 8 wedges
  • 62.50 ml dark rum
  • 4 Medjool (fresh) dates, pitted, quartered lengthways
  • 665.00 ml Greek yoghurt
  • 37.95 gm walnuts, toasted
Instructions:
  • Heat sugar in a heavy medium frying pan over medium-high heat until it starts melting around the edges, without stirring.
  • Swirl pan gently to melt sugar into golden brown perfection, reheating as needed.
  • Lower the heat to medium and gently place the pears into the bubbling caramel, swirling the pan to evenly coat them. Be cautious to avoid any burns.
  • Add the rum to the pan and gently swirl to mix well. Let it simmer for 2 minutes until the sauce thickens and the pears are soft.
  • Take the pan off the heat and fold in the dates. Let it cool for approximately 5 minutes.
  • Scoop out 1/3 cup of yogurt into each of 4 dessert glasses for serving.
  • Spoon half of the pear mixture into each glass, then layer with the remaining yogurt and pear mixture.
  • Top with crunchy walnuts just before serving for an extra layer of flavor and serve promptly.
