Cinnamon rice pudding with caramelised pears

Indulge in our cozy cinnamon rice pudding topped with caramelized pears for a sweet and fruity winter treat.
Ingredients:
  • 30g butter, extra
  • Melted butter, to grease
  • 375ml (1 1/2 cups) milk
  • 300ml thickened cream
  • 2 eggs, lightly whisked
  • 40.00 gm caster sugar
  • 2.20 gm vanilla extract
  • 2.50 gm ground cinnamon
  • 150g (2/3 cup) white medium-grain rice
  • 4 medium pears, peeled, cored, thickly sliced
  • 100g (1/2 cup, firmly packed) brown sugar
  • 40.40 gm thin cream
  • Vanilla ice-cream, to serve,if desired
Instructions:
  • Preheat the oven to 160°C and generously brush a 1.5L (6 cup) round ovenproof dish with melted butter.
  • In a bowl, mix together milk, cream, egg, sugar, vanilla, cinnamon, and rice until combined. Pour the mixture into a prepared dish and bake in the oven for 1 1/2 hours or until just set. Take it out of the oven.
  • In a pan over medium heat, melt butter until foamy. Cook pears until tender and golden brown, stirring occasionally for 5 minutes. Add sugar and cream, continue cooking for 3 minutes until sauce slightly thickens.
  • Divide the creamy rice pudding into bowls and generously top each with sweet, juicy pears before serving.
