Italian (Arborio) Rice Pudding

Decadent cinnamon rice pudding with a touch of lemon - lusciously smooth and creamy.
Ingredients:
  • 2 cups water
  • 1 cup Arborio rice
  • 0.25 teaspoon salt
  • 3 cups half-and-half
  • 1 cup sugar
  • 1 cinnamon stick
  • 1 (1 1/2 inch) piece lemon peel, or more to taste
  • 1 pinch ground cinnamon, for garnish
Instructions:
  • In a large saucepan, bring water to a boil. Add rice, butter, and salt, then cover the saucepan. Reduce the heat to medium-low and simmer the rice until tender and most of the moisture is absorbed, for about 20 minutes.
  • Combine half-and-half and sugar with the rice until the sugar dissolves. Mix in a cinnamon stick and lemon peel. Bring to a boil, then remove from heat.
  • Set up a double boiler by placing a large stainless steel bowl over a pot of simmering water. Pour the rice mixture into the bowl and cook, stirring occasionally, until thickened, approximately 45 minutes.
  • Transfer the creamy rice pudding into a elegant serving dish. Gently remove the cinnamon stick and lemon peel, then allow the pudding to cool a bit. Sprinkle a touch of cinnamon on top for a beautiful presentation when serving.
