Ultimate veggie pizza with sweet butternut pumpkin.
Ingredients:
  • 1/2 butternut pumpkin, cut into 1cm cubes
  • 125ml chicken stock
  • 16.00 gm dark brown sugar
  • 100g baby spinach leaves
  • 2 large ready-made pizza bases
  • 125g Taleggio cheese, sliced **
  • 1 tsp thyme leaves, chopped
  • Olive oil, to drizzle
Instructions:
  • In a large frypan, melt butter over low heat. Add pumpkin and cook until just tender, stirring occasionally. Pour in stock, 1/4 cup water, and sugar to the pumpkin mixture. Simmer for 5 minutes until liquid reduces and pumpkin caramelizes. Toss in spinach and cook until wilted.
  • Preheat your oven to 200°C.
  • Spread pumpkin mixture over pizza bases, sprinkle with Taleggio and fresh thyme, then drizzle with oil. Bake for 10 minutes or until the crust is crispy and the cheese is melted. Slice into wedges before serving.
