Caramelized Brussels sprouts with red onion, pistachios, and sweet vinegar glaze - a flavorful winter side dish loved by all.
Ingredients:
  • 4 pounds Brussels sprouts
  • 0.5 cup unsalted butter
  • 4 small red onions, cut into strips
  • 0.25 cup red wine vinegar
  • 2 tablespoons white sugar
  • salt and pepper to taste
  • 0.5 cup coarsely chopped pistachios
Instructions:
  • 1. Set up a steamer in a saucepan with water just below the steamer. Bring to a boil. 2. Steam Brussels sprouts covered until crisp-tender, for 8 to 10 minutes.
  • In a deep skillet over medium-high heat, melt butter until sizzling. Sauté onions with 3 tablespoons of vinegar in the fragrant butter until caramelized and golden brown.
  • Combine steamed Brussels sprouts, sugar, and the remaining 1 tablespoon vinegar with the onions in the skillet. Cook over medium heat until Brussels sprouts are lightly caramelized.
  • Season the dish with a pinch of salt and a sprinkle of pepper. Top with a generous handful of pistachios before serving.
