Delicious fall side dish: Brussels sprouts with caramelized onions and pecans.
Ingredients:
  • 1 lb fresh Brussels sprouts
  • 1 large onion, halved lengthwise, thinly sliced
  • 1/4 cup butter or margarine
  • 1 cup broken pecans
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Instructions:
  • Cut Brussels sprouts in half and thinly slice. Place sprouts and onion in individual resealable bags, seal, and refrigerate for 8 hours.
  • In a large heavy skillet over medium-high heat, melt butter until sizzling. Add pecans and toast for 5 minutes, stirring often until golden brown. Remove pecans from skillet.
  • Saute onion in skillet over medium heat for 15 minutes, stirring occasionally, until caramelized. Add Brussels sprouts and toasted pecans, cooking for about 3 minutes, stirring frequently until sprouts are tender. Season with salt and pepper to taste.
