Effortlessly make a gourmet pizza in 35 minutes using Pillsbury™ Thin Crust Pizza Crust with pancetta, caramelized onions, fontina, and Monterey jack cheese.
Ingredients:
  • 1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust
  • 2 1/2 teaspoons olive oil
  • 8 oz pancetta (Italian-style bacon) or Canadian bacon, chopped
  • 2 medium onions, chopped (1 cup)
  • 1 tablespoon chopped fresh thyme
  • 1/2 teaspoon salt, if desired
  • 1/2 teaspoon white pepper
  • 3/4 cup shredded fontina cheese (3 oz)
  • 4 oz Monterey Jack cheese, shredded
  • Cracked black pepper
Instructions:
  • Preheat the oven to 475°F. Coat a cookie sheet with cooking spray and gently unroll the dough onto the sheet. Using your hands, press the dough into a 15x10-inch rectangle, starting from the center and working outwards.
  • In a large nonstick skillet over medium-high heat, heat 1 teaspoon of olive oil and cook pancetta, stirring occasionally, for 2 minutes until crisp.
  • Cook the onions, thyme, salt, and pepper over medium-low heat for 20 minutes until the onions are nicely browned, stirring frequently.
  • Brush the dough with the remaining 1 1/2 teaspoons of aromatic olive oil. Spread half of the savory onion mixture on top, leaving a small border. Generously sprinkle a variety of cheeses over the pizza and finish by layering on the rest of the delicious onion mixture.
  • Bake until crust is crisp, cheese in center is melted, then sprinkle with black pepper.
