Gouda and caramelized onion-stuffed chicken breasts, coated and baked to crispy perfection.
Ingredients:
  • 2 yellow onions, sliced
  • 4 skinless, boneless chicken breast halves
  • 4 Borden® Gouda Cheese Slices, or more as needed
  • 1 (4.75 ounce) package seasoned coating mix for chicken
Instructions:
  • In a skillet over medium-low heat, melt butter. Add onions and saute until golden brown, stirring frequently. Continue cooking until onions turn a deeper brown, about 35 to 45 minutes, adjusting heat if needed to prevent burning. Once onions are completely caramelized, remove skillet from heat.
  • Preheat the oven to 400 degrees F (200 degrees C) and line a rimmed baking sheet with aluminum foil.
  • Make a deep pocket in each chicken breast and stuff evenly with 1 or 2 slices of Gouda cheese (adjust depending on breast size) and 1 tablespoon of caramelized onions.
  • Transfer the seasoned coating mix to a shallow dish. Coat each chicken breast evenly with the mix and place on the baking sheet.
  • Roast in a preheated oven until chicken breasts are cooked through and the juices run clear, which should take about 20 to 30 minutes. Use an instant-read thermometer to confirm the internal temperature reaches at least 165 degrees F (74 degrees C).
