Delicious mini quiches with eggs, prosciutto, caramelized onion, and Gouda cheese layers.
Ingredients:
  • 1 onion, thinly sliced
  • 1 tablespoon brown sugar
  • 2 drops white wine vinegar
  • cooking spray
  • 4 egg whites
  • 2 eggs
  • 0.25 cup shredded Gouda cheese
  • 1 slice thick-cut prosciutto, cubed
Instructions:
  • Caramelize onion with brown sugar and vinegar in a skillet over medium heat for about 20 minutes, stirring occasionally, until onion turns golden.
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a 6-cup muffin tin with cooking spray.
  • Beat egg whites and eggs together in a large measuring cup using a whisk.
  • Divide egg mixture evenly among muffin cups, filling each halfway. Sprinkle with onion, Gouda cheese, and prosciutto cubes. Top with the rest of the egg mixture, ensuring a 1/4-inch gap from the top for rising eggs.
  • Bake until the top turns golden brown, around 20 minutes in the preheated oven.
