Savor these Prosciutto and Egg Waffle Benedict made with Bisquick mix for a delicious breakfast treat!
Ingredients:
  • 1 package (0.9 oz) hollandaise sauce mix
  • 1 tablespoon lemon juice
  • 1/4 teaspoon dried tarragon leaves
  • 2 cups Original Bisquick™ mix
  • 1 1/3 cups buttermilk
  • 2 tablespoons vegetable oil
  • 5 eggs
  • 1/2 teaspoon white vinegar
  • 8 thin slices prosciutto (about 4 oz)
  • Chopped fresh chives, if desired
Instructions:
  • Prepare the hollandaise sauce according to package instructions, incorporating the lemon juice and tarragon for extra flavor. Keep warm by covering. In a medium bowl, combine Bisquick mix, buttermilk, cheese, oil, and 1 egg. Stir with a fork or whisk until well blended, then allow the mixture to rest for 5 minutes.
  • Preheat the waffle maker and brush it with a bit more oil. Pour the batter onto the center following the manufacturer's recommended amount. Close the lid and let it cook for about 5 minutes, or until the waffles are golden brown and the steaming stops.
  • In a 3-quart saucepan, bring 2 to 3 inches of water to a boil, then reduce to a simmer. Stir in the vinegar. Carefully crack each of the remaining 4 eggs into a custard cup and gently add them to the simmering water. Poach the eggs for 3 to 5 minutes until the whites and yolks are set. Use a slotted spoon to remove the poached eggs from the water.
  • Layer 2 waffles, 2 slices of prosciutto, and 1 poached egg. Drizzle with hollandaise sauce to taste and sprinkle with chives.
