Whip up a flavorful baked brunch dish with creamy goat cheese, caramelized onions, and crispy pancetta in just 30 minutes.
Ingredients:
  • 1 teaspoon butter
  • 1 teaspoon olive oil
  • 1 medium sweet onion, thinly sliced
  • 4 oz pancetta (Italian-style bacon), chopped
  • 2 tablespoons butter
  • 8 Land O Lakes® All-Natural Farm-Fresh eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 4 oz chèvre (goat) cheese, crumbled (1 cup)
  • 1 oz Parmesan cheese, shredded
Instructions:
  • In a 10-inch ovenproof skillet, melt 1 teaspoon of butter with oil over medium heat. Sauté onions in the mixture for 20 minutes until soft, stirring frequently. Once soft, crisp up the pancetta. Remove excess drippings from the skillet, leaving only 1 tablespoon. Stir in 2 tablespoons of butter into the skillet.
  • In a medium bowl, whisk together eggs, milk, salt, and pepper until well combined; pour over pancetta mixture in a hot skillet. Sprinkle 1/2 cup goat cheese on top. Allow the mixture to cook without stirring, gently lifting the cooked portions with a spatula so the uncooked parts can flow to the bottom. Cook for 3 minutes until the eggs are thickened but still slightly moist; then remove from heat. Sprinkle the remaining goat cheese and Parmesan cheese over the cooked eggs before serving.
  • Preheat oven to broil. Broil the skillet 6 inches from heat for 1 to 2 minutes until eggs are set and the top is lightly browned. Cut into 8 wedges to serve.
