Indulge in a delectable caramelized onion quiche featuring rich Gruyere cheese, perfect for any meal of the day.
Ingredients:
  • 1 recipe pie dough (see Pâte Brisée recipe )
  • 2 tablespoons extra virgin olive oil
  • 2-3 large red onions (about one pound total), French-cut (see below)
  • Salt and freshly ground pepper
  • 2 teaspoons balsamic vinegar
  • 3/4 cup milk
  • 1/4 cup heavy cream
  • 3 large eggs
  • Pinch nutmeg
  • 6 ounces Gruyère cheese, grated (1 1/2 cups)
Instructions:
  • For a homemade crust, roll out the dough on a lightly floured surface into a 12-inch circle. Place in a 9 x 1 1/2-inch round tart pan or 9-inch pie dish, pressing the dough into corners and leaving high edges. Chill in the freezer for 30 minutes before using.
  • Preheat your oven to 350°F. Line the pastry with aluminum foil, pressing it into the corners and edges, leaving extra foil on the sides for easy removal later. Fill the crust at least 2/3 full with baking weights such as dried beans, rice, copper pennies, or ceramic/metal pie weights.
  • Bake with weights for 15 minutes, then cool for a few minutes. Carefully remove foil and weights.
  • After removing weights, prick the bottom of the pie pan with a fork and bake again in the oven for 10 more minutes or until lightly golden. (The fork holes help air escape). Cool on a wire rack before preparing the filling.
  • To caramelize the onions for a rich flavor: Heat olive oil in a large sauté pan. Add onions, sprinkle with salt, and cook over medium heat until softened and translucent. Reduce heat and cook for 40 minutes until deep brown. Stir in balsamic vinegar and cook for 10 more minutes until fully caramelized. Remove from heat.
  • Assemble the quiche by placing the tart pan on a baking sheet to catch any runoff. Sprinkle half of the cheese evenly over the crust. Layer onions on top of the cheese, then finish with the remaining cheese.
  • Prepare the custard: Combine milk, cream, and eggs in a bowl. Season with nutmeg, salt, and pepper. Pour the mixture over the tart.
