Caramelized Plantains

Plantains baked with caramelized sugar crust, topped with toasted coconut for a delicious dessert.
Ingredients:
  • 2 ripe plantains
  • 0.25 cup white sugar, divided, or as needed
  • 3 tablespoons lemon juice
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup sweetened flaked coconut
Instructions:
  • Peel plantains and slice into 1/4-inch pieces. Combine with sugar, lemon juice, and cinnamon in a bowl. Mix well, cover, and chill in the refrigerator for 2 hours.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • Bake the covered bowl in the oven for 25 minutes.
  • Prepare the cookie sheet by greasing it and evenly sprinkle a thin layer of coconut. Toast in the oven until the coconut is lightly browned, for an extra 5 to 7 minutes. Take both dishes out of the oven.
  • Divide plantains among bowls. Cover them generously with sugar and caramelize using a cooking torch. Finish with toasted coconut and serve while warm.
