Caramelized-Vegetable Salad

Sweet caramelized onions, beans, and potatoes top crisp leaf lettuce in a fragrant veggie salad.
Ingredients:
  • 2 pounds small red potatoes, cut into 1-inch pieces
  • 1 pound green beans, cut in half
  • 1/3 cup butter or margarine
  • 2 large onions, chopped (2 cups)
  • 1/4 cup balsamic or cider vinegar
  • 1/4 teaspoon salt
  • 6 cups bite-size pieces leaf lettuce
  • Freshly gound pepper, if desired
Instructions:
  • Bring 1 inch of water to a boil in a 4-quart Dutch oven. Add potatoes, green beans, and 1/2 teaspoon of salt. Boil, then reduce heat to medium, cover, and cook for about 10 minutes until vegetables are tender. Drain and set aside.
  • Once the vegetables are cooking, melt butter in a 12-inch skillet over medium-high heat. Sauté onions in the butter for 10 to 12 minutes until they turn golden brown, stirring occasionally. Add vinegar, brown sugar, and 1/4 teaspoon salt to the skillet. Finally, pour the onion mixture over the potatoes and green beans, and stir until everything is well coated.
  • Place the lettuce elegantly on a large platter. Top with the warm vegetables and generously sprinkle with pepper.
