Toasted quinoa with caramelized onion, mixed with zucchini, mushrooms, celery, spinach, and garbanzo beans for a flavorful vegetarian dish.
Ingredients:
  • 1 tablespoon olive oil, or more if needed
  • 1 sweet onion (such as Vidalia®), chopped
  • 3 cloves garlic, minced, or to taste
  • 1 cup quinoa, rinsed
  • 1.25 cups vegetable broth
  • 1 small zucchini, chopped
  • 1 cup mushrooms, sliced
  • 2 stalks celery, chopped
  • 0.5 teaspoon sea salt
  • 1 cup baby spinach leaves
  • 1 (15 ounce) can garbanzo beans, drained and rinsed
Instructions:
  • In a large saucepan, heat olive oil over medium heat. Sauté onion until translucent, about 5 minutes. Add garlic and quinoa, cook until quinoa turns light brown and smells toasty, 5 to 7 minutes. Stir in stock gradually, bring to a boil, then add zucchini, mushrooms, and celery. Season with salt and pepper. Simmer until veggies are tender, about 15 minutes. Mix in spinach and garbanzo beans, simmer until quinoa is tender, an additional 10 to 15 minutes.
