Ingredients:
  • 1/4 cup margarine or butter
  • 2 medium onions, sliced and separated into rings
  • 8 small red potatoes, cut in half
  • 2 tablespoons packed brown sugar
  • 1/2 pound whole mushrooms
  • 1 teaspoon dried thyme leaves
  • 2 tablespoons cider vinegar
  • 2 cups thin strips spinach leaves
  • 1 medium tomato, chopped (3/4 cup)
Instructions:
  • In a 12-inch nonstick skillet over medium heat, melt the margarine. Stir in onions, potatoes, and brown sugar, and cook for 12 minutes, stirring frequently.
  • Add the mushrooms and thyme, then cook for 7 minutes, stirring often, until the potatoes are tender.
  • Mix in the tangy vinegar and savory salt. Gently incorporate the vibrant spinach and juicy tomato, giving them a satisfying toss. Cook for 1 minute.
