Festive Christmas tree dessert featuring Caramilk cheesecake, Lotus Biscoff biscuits, chocolate chips, and colorful lollies.
Ingredients:
  • 1kg cream cheese, chopped, at room temperature
  • 60g (1/3 cup) icing sugar mixture, plus extra, to dust
  • 180g Caramilk chocolate, melted, cooled
  • 165g (1/2 cup) Lotus Biscoff spread
  • 40 white chocolate chips
  • 40g white chocolate melts, melted
  • Gold star sprinkles, to decorate
  • 2 x 150g pkts Lotus Biscoff Cream sandwich biscuits, split, plus extra biscuits, to serve
  • Raspberry lollies, to decorate
  • White mini marshmallows, to decorate
  • White chocolate star, to decorate
Instructions:
  • In a bowl, use electric beaters to mix cream cheese and icing sugar until smooth. Slowly add melted Caramilk chocolate, beating constantly until well combined. Gently fold in the Biscoff spread. Line a deep 2L (8 cup) bowl with overhanging plastic wrap. Spoon in the mixture, smooth the top, cover, and refrigerate for 4 hours or overnight to chill.
  • Transfer the cream-cheese mixture to a plate using the overhanging plastic. Shape it with your hands into a cone shape, ensuring the base is around 15cm in diameter. Remove the plastic wrap and refrigerate.
  • Prepare a baking tray by lining it with baking paper. Dip a handful of white chocolate chips into the melted white chocolate, then garnish each with a gold star sprinkle. Arrange them on the tray and let them cool until set. Repeat this process to make around 40 pieces.
  • Begin by pressing the biscuits onto the cream cheese cone, layering them to form a tree shape covering the cone. Dip the chocolate chips, raspberry lollies, and marshmallows into the melted white chocolate and stick them onto the biscuits. Finish by placing the chocolate star on top, then lightly sprinkle with icing sugar. Enjoy with extra biscuits on the side.
