Create a flavorful cardamom breakfast casserole with a fragrant glaze.
Ingredients:
  • 5 cups cubed stale firm white bread
  • 1 cup chopped pecans
  • 3 eggs
  • 1.5 cups milk
  • 0.75 teaspoon almond extract
  • 1 tablespoon ground cardamom, or more to taste
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup brown sugar
  • 1 cup confectioners' sugar
  • 0.5 teaspoon ground cardamom
  • 3 tablespoons milk, or as needed
Instructions:
  • Preheat your oven to 350°F (175°C) and grease a 9x12-inch baking dish with cooking spray.
  • Spread the bread cubes evenly in the dish and generously sprinkle with the pecans.
  • Whisk together eggs, 1 1/2 cup milk, almond extract, 1 tablespoon cardamom, cinnamon, and brown sugar until smooth. Pour over bread cubes and pecans, then cover with foil and let sit for 15 minutes to meld the flavors.
  • Bake in the oven for 20 minutes with aluminum foil, then bake uncovered until golden brown, for an additional 20-25 minutes. Let cool for about 10 minutes before serving.
  • In a bowl, whisk together confectioners' sugar, 1/2 teaspoon cardamom, and 3 tablespoons milk until the mixture is smooth. Drizzle over the slightly cooled casserole before serving.
