Impress guests with a French classic: ripe pear custard with lemon and cardamom.
Ingredients:
  • 1 tablespoon softened butter
  • 2 ripe pears - peeled, cored, and sliced, or more to taste
  • 3 eggs
  • 0.75 cup white sugar
  • 1.5 cups heavy whipping cream
  • 0.5 cup all-purpose flour
  • 2 tablespoons kirsch (cherry brandy)
  • 2 tablespoons grated lemon zest
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cardamom
  • 2 tablespoons confectioners' sugar
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Grease a 10 1/2-inch round baking dish or pie plate with butter. Arrange pear slices in a single layer, fanning them out on the bottom.
  • Using an electric mixer with a paddle attachment, beat eggs and sugar until light and fluffy for about 3 minutes. Then, mix in heavy cream, flour, kirsch, lemon zest, vanilla extract, cardamom, and salt until batter is smooth on low speed. Let the batter rest for about 15 minutes before proceeding.
  • Cover the pears in the baking dish with the batter.
  • Bake in the preheated oven until golden brown and set, for 40 to 45 minutes. Allow to cool for about 15 minutes. Serve warm, dusted with confectioners' sugar.
