Indulge in Chef John's elegant pear clafoutis, a stunning twist on the French classic, featuring luscious, ripe pears.
Ingredients:
  • 2 tablespoons unsalted butter, softened, divided
  • 3 large eggs
  • 0.33333334326744 cup white sugar, or to taste
  • 1.25 cups whole milk
  • 0.25 teaspoon fine salt
  • 1 pinch freshly grated nutmeg
  • 1.5 teaspoons vanilla extract
  • 0.5 teaspoon almond extract
  • 3 cups thinly sliced sweet, ripe pears
  • 0.5 cup toasted sliced almonds
  • 0.5 tablespoon white sugar, or as needed
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) while generously greasing a 10-inch baking dish with 1 tablespoon of butter.
  • Combine eggs, 1/3 cup sugar, milk, salt, nutmeg, vanilla extract, almond extract, and flour in a bowl and whisk until smooth.
  • Set aside 12 to 14 pear slices for topping. Place the rest of the pear slices in the baking dish. Pour the egg custard mixture over the pears and sprinkle almonds on top. Gently tap the dish on the counter to settle the mixture. Arrange the reserved pear slices on top, brush with melted butter, and sprinkle with 1/2 tablespoon of sugar.
  • Bake in the preheated oven for about 45 minutes, until the top is golden, fruit is soft, and custard is set. Allow it to cool to room temperature before serving, or chill and serve.
