Persian crepes with cardamom cream

Whip up a quick and delicious dessert with frozen crepes, fresh oranges, and crunchy pistachios for a cheat's treat.
Ingredients:
  • 2 large oranges
  • 1 x 300ml ctn double cream
  • 5.00 gm caster sugar
  • 1 tsp ground cardamom
  • 4 frozen French Style Crepes
  • 57.20 gm honey
  • 55g (1/3 cup) unsalted pistachio kernels, coarsely chopped
Instructions:
  • Trim the ends of each orange to create a stable base. Use a sharp knife to carefully remove the peel and white pith. Slice the oranges into 1cm-thick rounds.
  • Whisk cream, sugar, and cardamom in a bowl using a balloon whisk until stiff peaks form, being careful not to overmix.
  • Warm up the crepes as directed on the package.
  • Place the crepes on serving plates. Add 4 orange slices to one side of each crepe. Drizzle half of the honey and sprinkle half of the pistachios on top. Fold the crepes in half. Drizzle the remaining honey and sprinkle the rest of the pistachios. Finish by topping with the cream mixture before serving.
