Delicious coconut and cardamom crepes make the perfect sweet breakfast for the family.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 tablespoon white sugar
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 cups milk
  • 2 tablespoons butter, melted
  • 2 eggs
  • 0.5 teaspoon vanilla extract
  • 2 teaspoons vegetable oil, or as needed
  • 0.5 cup flaked coconut
  • 1 tablespoon white sugar, or more to taste
  • 0.25 teaspoon ground cardamom
Instructions:
  • In a large bowl, combine flour, 1 tablespoon sugar, baking powder, and salt. Mix in milk, butter, eggs, and vanilla extract until smooth.
  • Heat vegetable oil in a skillet over medium-high heat. Pour 1/4 cup batter onto the skillet, swirling to spread evenly. Cook until lightly browned, about 2 minutes per side. Transfer to a plate and repeat with remaining batter, adding more oil as needed.
  • Combine shredded coconut, a tablespoon of white sugar, and cardamom in a small bowl. Spoon 1 to 2 tablespoons of the coconut mixture onto the center of each crepe, then fold it like an envelope or in half.
