Surprise your Valentine with adorable heart-shaped cookies.
Ingredients:
  • 125g butter, chilled, chopped
  • 415.00 ml plain flour, plus extra for dusting
  • 25.00 gm malted milk powder
  • 49.50 gm pure icing sugar, plus extra for dusting
  • 500g ready to roll white icing
  • 1 tsp strawberry essence
  • Pink, green, blue, purple and yellow gel food colouring
Instructions:
  • In a food processor, combine butter, flour, milk powder, and icing sugar until fine crumbs form. Add egg and process until just combined. Transfer dough to a floured surface, knead until smooth, shape into a disc, wrap in plastic, and refrigerate for 30 minutes.
  • Preheat your oven to 170C (150C fan-forced) and line 2 large baking trays with baking paper. Roll out the dough between 2 sheets of baking paper until it's 5mm thick. Use a 6cm round cutter to cut rounds from the dough, re-roll and cut any trimmings. Then, place the rounds 2cm apart on the lined trays.
  • Bake one tray at a time for 12 to 15 minutes, or until lightly golden. Allow to rest for 5 minutes, then transfer to a wire rack to cool completely.
  • Dust a flat surface with extra icing sugar, then knead the white icing until smooth. Incorporate the strawberry essence. Divide the icing into 5 equal portions and use food coloring to tint them pink, green, blue, purple, and yellow.
  • Roll out the pink icing between 2 sheets of baking paper into a 3mm thick sheet. Use a 6cm round cutter to cut out 1 round from the icing. Lightly brush one biscuit with water and place the icing round on top, gently pressing to secure it. Press a 4.8cm heart-shaped cutter into the icing on the biscuit. Use alphabet stamps to stamp messages onto the biscuits. Repeat with the remaining biscuits, icing portions, and water. Allow them to set aside for 30 minutes or until the icing is firm. Serve.
