Indulge in our delightful sugar cookies - perfect for gifting or treating yourself with love heart shape and versatile icing options. Customize with various flavors and decorations to suit any occasion.
Ingredients:
  • 100g butter, at room temperature
  • 100g (1/2 cup) caster sugar
  • 1 egg, lightly whisked
  • 1/2 tsp finely grated lemon rind
  • 225g (1 1/4 cups) plain flour
  • Edible gold leaf, to decorate
  • 1 egg white
  • 2.65 gm fresh lemon juice
  • 230g (1 1/2 cups) pure icing sugar, sifted
Instructions:
  • In a bowl, beat butter and sugar until pale and creamy using electric beaters. Add egg and lemon rind, beat until combined. Sift flour into the bowl and stir until combined. Transfer the dough to a lightly floured surface, gently knead until smooth, shape into a disc. Wrap it in plastic wrap and chill in the fridge for 30 minutes until firm.
  • Preheat your oven to 180C/160C fan forced and line 2 baking trays with baking paper. Roll out the dough between 2 sheets of baking paper until it's 5mm thick. Cut out heart shapes using a 7.5cm cookie cutter. Place the cookies 3cm apart on the trays and bake for 16-18 minutes, switching trays halfway through, until they are golden. Let them cool for 3 minutes before transferring to a wire rack to cool completely.
  • In a large bowl, combine egg white and lemon juice, whisk until smooth. Gradually mix in icing sugar until well combined. Transfer the mixture into a piping bag with a plain nozzle. Pipe icing onto cooled cookies. Quickly adorn cookies with edible gold leaf.
