Love Bug Cake Balls

Delightful Valentine's Day cookies: decorate and enjoy!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Vanilla Cake Mix (or your favorite flavor)
  • Water, vegetable oil and eggs called for on cake mix box
  • 3/4 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting (or your favorite non-chip, no-nut flavor)
  • 3 bags (12 oz each) candy coating (any color)
  • 48 paper lollipop sticks
Instructions:
  • Follow the instructions on the cake mix box for a 13x9-inch pan. Let the cake cool completely, then crumble it. Set aside about a quarter of the cake crumbs for coating the love bugs.
  • Thoroughly combine the leftover cake crumbs and frosting using a large spoon.
  • Shape mixture into quarter-sized cake balls and place them on a waxed paper-covered cookie sheet. Freeze for about 15 minutes to firm up, then transfer to the refrigerator to chill without freezing.
  • Fill a microwave-safe bowl with candy coating, making sure it is at least 3 to 4 inches deep. Microwave the bowl uncovered on Low (10%) in 30-second intervals, stirring after each, until the coating is melted and smooth.
  • Take out 2 cake balls from the fridge. Dip the end of a lollipop stick into the melted coating and insert it halfway into the cake ball. Dip the cake pop into the coating in one smooth motion to cover it entirely. To thin out the coating, add a touch of vegetable oil if needed.
  • Remove any excess coating by gently tapping it off the cake pop back into the bowl. Press cake crumbs around the ball before the coating sets. Place the stick in craft foam to dry.
  • After the cake ball has dried, gently remove it from the lollipop stick. Use the photo as inspiration to creatively place your favorite candy decorations to create fun and detailed expressions. Attach the decorations using melted candy coating. For the feet, affix the cake ball to a mini heart cookie. Use string licorice for antennae, heart candies for ears and eyes. Allow everything to dry completely before storing loosely covered.
