Impress your taste buds with our Vietnamese-inspired gyoza dish. Light, flavorful, and perfect for sharing. Ideal for a romantic meal.
Ingredients:
  • 200 g raw peeled prawns, from sustainable sources
  • 1 large shallot
  • 2 cloves of garlic
  • 4 spring onions
  • ½ a bunch of fresh coriander
  • 16 round dumpling wrappers
  • 100 g glass noodles
  • 1 tablespoon unsalted peanuts
  • 1 soft lettuce
  • a few sprigs of fresh basil
  • a few sprigs of fresh mint
  • Lingham’s chilli sauce
  • 1 fresh red chilli
  • 1 lime
  • 4 tablespoons caster sugar
  • 4 tablespoons fish sauce
Instructions:
  • For the dipping sauce, finely chop the chili and mix with lime juice (about 2 tablespoons), sugar, fish sauce, and 8 tablespoons of water. Set aside half for dipping and save the rest for the salad. Smash the prawns, chop. Finely chop the shallot, garlic, and spring onions. Combine prawns, shallot, garlic, coriander, and spring onion whites. Season and mix well. Fill wrappers, fold, and secure edges with water. Steam the dumplings or follow the Japanese method. Cook noodles and toast and crush peanuts. Arrange lettuce, herbs, noodles on plates, drizzle sauce, and sprinkle peanuts. Serve dumplings with the green spring onion slices and dipping sauces on the side.
