Chicken wonton noodle soup

One-pot noodle soup the whole family will love, perfect for toddlers and adults alike.
Ingredients:
  • 1020.00 gm chicken style liquid stock
  • 2 carrots, peeled, cut into matchsticks
  • 4.00cm piece fresh ginger, finely grated
  • 65.63 gm salt-reduced soy sauce
  • 125g rice-stick noodles
  • 6.00 green onions, thinly sliced
  • 200g chicken mince
  • 1 garlic clove, crushed
  • 20 wonton wrappers
  • 1 egg, lightly beaten
Instructions:
  • Prepare the wonton filling by mixing the mince, onion, ginger, and garlic in a bowl. Spoon a rounded teaspoon of the mixture onto the center of a wonton wrapper. Brush the edges with egg wash, then fold the corners together to create a pouch and press to seal. Set the completed wonton on a plate and repeat the process to make a total of 20 wontons.
  • In a saucepan over high heat, combine stock, carrot, and 4 cups of cold water. Bring to a boil, then lower the heat to medium and simmer for 5 to 7 minutes until the carrot is tender. Stir in ginger, soy sauce, noodles, and wontons. Simmer for an additional 5 minutes until the wontons are fully cooked. Serve the dish garnished with onions.
