Chicken wonton and corn soup recipe

Delightful chicken wonton and corn soup is perfect for warming up and satisfying cravings on chilly nights.
Ingredients:
  • 300g Australian Chicken Breast Mince
  • 2 spring onions, finely chopped
  • 24.40 gm fish sauce
  • 3 tsp sesame oil
  • 20 wonton wrappers
  • 500ml chicken stock
  • 2 x 420g cans creamed corn
  • 420g can corn kernels, rinsed, drained
  • 270ml can coconut cream
  • 42.00 gm salt-reduced soy sauce
Instructions:
  • Combine chicken, spring onion, fish sauce, and 2 tsp oil in a bowl, stirring until well mixed. Take a wonton wrapper, place 1 tsp of mince mixture in the center, moisten edges with water, then fold corners together to enclose the filling, pinching the center to seal. Repeat with remaining wrappers and mince mixture.
  • In a large saucepan, mix together the stock, creamed corn, corn kernels, coconut cream, and 1 cup (250ml) of water. Bring to a boil over medium-high heat. Drop in the wontons, then simmer on low for 5 minutes until the wontons are cooked through.
  • Divide the soup into serving bowls, then drizzle with soy sauce and the remaining oil.
