Cardamom Print Sandwich Cookies

Delight in baked cardamom and cinnamon sandwich cookies - a crowd-pleasing dessert!
Ingredients:
  • 1 cup firmly packed brown sugar
  • 1 cup butter, softened
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon cardamom
  • 1 teaspoon cinnamon
  • 1/4 cup sugar
  • 2 tablespoons butter
  • 1 1/4 cups powdered sugar
  • 4 to 5 teaspoons milk
Instructions:
  • In a large bowl, mix brown sugar and 1 cup of butter until light and fluffy. Add the egg and blend well. Stir in the flour, cardamom, and cinnamon until well combined. If needed, cover the bowl with plastic wrap and refrigerate for 1 hour for easier handling.
  • Preheat oven to 350°F. Shape dough into 1-inch balls and coat them in sugar. Arrange them 2 inches apart on ungreased cookie sheets. Press down each dough ball with a sugared, textured glass bottom to form 1 1/2-inch rounds.
  • Bake at 350°F until firm to the touch, about 6 to 10 minutes. Remove from cookie sheets right away and cool for 15 minutes until completely cooled.
  • In a medium saucepan over medium heat, melt 2 tablespoons of butter until it turns a light golden brown. Remove from heat and stir in all remaining filling ingredients, adding milk as needed for the desired spreading consistency. Spread about 1 teaspoon of filling between 2 cooled cookies for each sandwich cookie.
