Cardamom spiced rice

Fragrant rice - perfect with grilled meats.
Ingredients:
  • 18.20 gm light olive oil
  • 10 green cardamom pods, bruised
  • 1 large brown onion, finely chopped
  • 1 tsp finely chopped fresh ginger
  • 1.25 gm ground cumin
  • Pinch ground turmeric
  • 250g (1 1/4 cups) basmati rice
  • 625mls (2 1/2 cups) chicken style liquid stock
  • 20.00 ml chopped fresh coriander
  • Salt & ground black pepper, to taste
Instructions:
  • In a large heavy-based frying pan over medium-high heat, heat oil. Add cardamom pods and cook for 1 minute until aromatic. Be careful not to burn them. Add onion and cook for 5 minutes until soft. Stir in ginger, cumin, and turmeric and cook for 2 more minutes. Add rice and stock, bring to a boil while stirring occasionally. Reduce heat to low, cover tightly, and simmer for 19 minutes until rice is tender and liquid is absorbed. Avoid lifting the lid. Just before serving, mix in coriander and season with salt and pepper. Enjoy!
