Lighten up classic bar cookies with reduced-fat cream cheese and fat-free eggs for a guilt-free treat at just 100 calories.
Ingredients:
  • 1 1/2 cups packed brown sugar
  • 1/2 cup fat-free cholesterol-free egg product or 2 eggs
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 2 teaspoons vanilla
  • 1/2 teaspoon ground cardamom or cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups cashews, pieces and halves
  • 1/2 package (8 oz size) reduced-fat cream cheese (Neufchâtel)
  • 1/2 cup powdered sugar
  • 1/4 cup packed brown sugar
  • 1 egg yolk
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 3/4 cup powdered sugar
  • 1 tablespoon orange juice
Instructions:
  • Preheat oven to 350°F and grease a 13x9x2-inch rectangular pan. Press dough evenly into the pan. Bake for 15 to 20 minutes, or until lightly browned.
  • Mix together the rest of the ingredients, excluding cashews and Orange Drizzle, in a medium bowl using an electric mixer on medium speed for about 2 minutes until the mixture is thick and colored. Then, add cashews and spread the mixture over the baked crust.
  • Bake for 19 to 22 minutes until the top is golden brown and the edges are set. Allow to cool completely before spreading with Orange Drizzle and cutting into 8 rows by 6 rows.
  • Prepare the crust by whipping cream cheese and sugars in a medium bowl with an electric mixer until fluffy. Mix in vanilla and egg yolk. Slowly add flour to create a soft dough.
  • Combine the ingredients until you achieve a smooth and spreadable consistency for the Orange Drizzle.
