Tropical chicken bathed in sweet and tangy amber marinade with molasses, pineapple juice, rum, mustard, garlic, and ketchup.
Ingredients:
  • 0.5 cup ketchup
  • 4 tablespoons unsweetened pineapple juice
  • 4 tablespoons molasses
  • 2 tablespoons dark rum
  • 2 tablespoons prepared Dijon-style mustard
  • 2 cloves garlic, chopped
  • salt and pepper to taste
  • 8 chicken thighs
Instructions:
  • Prepare the glaze by mixing ketchup, pineapple juice, molasses, rum, mustard, garlic, salt, and pepper in a medium bowl until well combined.
  • Place the chicken in a lightly oiled 9x13 inch baking dish and generously coat both sides with half of the glaze. Cover the dish and refrigerate for a minimum of 2 hours or ideally overnight to marinate. Remember to refrigerate the leftover glaze for later use.
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • Brush chicken pieces with the reserved glaze and bake uncovered in a preheated oven for 25 minutes. Flip the pieces, brush with the rest of the glaze, and bake for another 25 minutes until the chicken is tender.
  • Turn the oven to high broil.
  • Broil chicken until lightly browned on both sides, approximately 2 to 3 minutes per side. (Caution: Keep a close eye on the chicken to prevent the 'sugary' glaze from burning!)
