Sweeten up your morning with a guilt-free breakfast of steel cut oats topped with raspberries and mangos.
Ingredients:
  • 1 3/4 cups water
  • 1 can (14 oz) reduced-fat (lite) coconut milk
  • 3/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt, if desired
  • 1 cup steel-cut oats (from 24-oz container)
  • 1 tablespoon honey
  • 1 (6 oz.) container Yoplait® Original French vanilla yogurt
  • 1 large mango, seed removed, peeled and chopped (about 1 1/2 cups)
  • 1 cup fresh raspberries
Instructions:
  • Combine water, coconut milk, 1/2 teaspoon of cinnamon, and salt in a 2-quart saucepan. Bring to a boil over medium-high heat. Add oats and simmer over low heat, uncovered, for 30 to 35 minutes, stirring occasionally until oats are tender. Remove from heat and stir in honey.
  • In 4 bowls, distribute oats evenly. Add a generous 2 tablespoons of yogurt on top of each bowl, followed by about 1/3 cup of mango and 1/4 cup of raspberries. Finish by sprinkling each bowl evenly with the remaining 1/4 teaspoon of cinnamon.
