Spicy red chili stew with a choice of meat, perfect with beans or crispy French fries.
Ingredients:
  • 2 pounds beef stew meat, cut into 1 1/2 inch cubes
  • 4 tablespoons guajillo chile powder
  • 2 cloves garlic, minced
  • 1.25 teaspoons dried Mexican oregano
  • 2 tablespoons all-purpose flour
  • 2 tablespoons vegetable oil
  • 0.25 teaspoon ground cumin
  • 1 tablespoon chopped fresh parsley
Instructions:
  • In a saucepan, let water, 1/2 teaspoon of salt, and beef cubes mingle before boiling gently. Simmer for 30 minutes.
  • In a small bowl, mix the chile powder, minced garlic, and oregano. Stir in some beef cooking water until a paste forms. After 30 minutes, incorporate the spice paste into the beef mixture.
  • In a large heavy skillet over medium heat, warm oil. Stir flour constantly until golden brown. Whisk in 1 cup of spiced cooking water until smooth. Add cumin, chopped parsley, and salt, and stir.
  • Combine the thickened sauce with the beef in a saucepan. Cook over low heat until the beef is tender, around 1 1/2 hours.
