Spicy chipotle mayo, seasoned beef, melted cheese, avocado, tomatoes, and cilantro fill these delectable Mexican sandwiches.
Ingredients:
  • Chipotle Mayonnaise:
  • 1.5 cups mayonnaise
  • 0.5 cup sour cream
  • 0.25 cup chopped fresh cilantro
  • 0.25 cup diced green onions
  • 1.5 tablespoons ground chipotle chile powder
  • 1 tablespoon lime juice
  • 1 tablespoon garlic basil spread (see footnote for recipe link)
  • 1 teaspoon ground cumin
  • salt and freshly ground black pepper
  • Filling:
  • 2 pounds beef tri-tip steak, thinly sliced
  • 2 Anaheim chile peppers, diced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 lime, juiced
  • 1 tablespoon minced garlic
  • 1 teaspoon red pepper flakes
  • 1 teaspoon ground chipotle chile powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Mexican oregano
  • 1 cup chopped fresh cilantro
  • 2 jalapeno peppers, sliced
  • Assembly:
  • 4 Italian-style hoagie buns, split lengthwise
  • 0.5 pound sliced Asiago cheese, divided
  • 1 avocado, sliced - divided
  • 1 cup halved cherry tomatoes, divided
  • 0.5 cup chopped fresh cilantro, divided
Instructions:
  • In a bowl, mix together mayonnaise, sour cream, 1/2 cup cilantro, green onions, 1 1/2 tablespoon ground chipotle peppers, 1 tablespoon lime juice, garlic basil spread, 1 teaspoon cumin, salt, and black pepper. Stir well, cover, and refrigerate for at least 1 hour before serving.
  • In a large bowl, mix beef tri-tip, Anaheim chile peppers, onion, red bell pepper, green bell pepper, lime juice, olive oil, garlic, red pepper flakes, cumin, chipotle pepper, smoked paprika, and Mexican oregano. Season with salt and black pepper, then toss well to combine. Refrigerate the beef mixture for at least 4 hours before using.
  • Heat your oven to a sizzling 500 degrees F (260 degrees C).
  • In a large pot or Dutch oven over medium-high heat, cook the beef mixture while stirring constantly until onions soften and turn golden, and the beef browns, about 15 to 20 minutes. Add 1 cup of chopped cilantro and jalapeno peppers, and stir in.
  • Spread 2 tablespoons of chipotle mayonnaise on each hoagie bun. Fill buns with beef mixture and sprinkle 2 ounces of Asiago cheese on top of each sandwich.
  • Lay sandwiches on a baking sheet and bake in the preheated oven until cheese is gooey and bread is golden and toasty, around 5 minutes. Sprinkle fresh avocado, cherry tomatoes, and 1/2 cup cilantro evenly over the 4 sandwiches.
