Delicious lime and pepper marinated beef strips in soft corn tortillas with tangy tomatillo sauce and your favorite toppings - a must-try taco dish!
Ingredients:
  • 1.5 pounds boneless beef top sirloin, cut into thin bite-size slices
  • 0.5 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • crushed red pepper to taste
  • 1 lime
  • 1 (28 ounce) can tomatillos
  • 2 fresh jalapeno peppers, seeded
  • 4 tablespoons canola oil, divided
  • 1 (10.5 ounce) can beef broth
  • 12 (6 inch) corn tortillas
  • 0.5 large onion, chopped
  • 2 tomatoes, chopped
  • 1 avocado - peeled, pitted and sliced
  • 1 bunch fresh cilantro, chopped
  • 1 lemon
Instructions:
  • In a shallow bowl, generously season sliced meat with salt, black pepper, and crushed red pepper. Drizzle lime juice, coat evenly, cover, and refrigerate for 30 minutes.
  • Puree tomatillo and jalapeno in a blender or food processor until thick. Heat 1 tablespoon oil in a large skillet over medium high heat. Add the tomatillo mixture and cook for 5 minutes, stirring frequently. Pour in beef broth, reduce heat, and simmer for 20 to 30 minutes until thickened. Serve in a dish.
  • In a large skillet over high heat, saute 1/3 of the beef in a tablespoon of oil for 1 minute. Transfer to a serving dish. Repeat with remaining beef. Heat tortillas in the oven or microwave based on package instructions.
  • Stack two tortillas, pile on your favorite amount of meat, drizzle with the zesty tomatillo mixture, and finish with onions, tomatoes, avocado, and cilantro. Spruce it up with a lemon wedge for a tangy kick right before indulging.
