Tender slow-cooked rump roast seasoned with onion, garlic, and spices. Pair with Mexican dishes like street tacos, burrito bowls, or nachos for a flavorful meal.
Ingredients:
  • 1/3 cup lime juice
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons white vinegar
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet Hungarian paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground red pepper (cayenne)
  • Salt and pepper to taste
  • 1 sweet onion (Maui or Walla Walla), cut into chunks
  • 1 beef rump roast (2 lb)
  • 3 cloves garlic, finely chopped
Instructions:
  • Combine lime juice, oil, vinegar, cumin, paprika, chili powder, red pepper, salt, and pepper in a small bowl and whisk until well mixed.
  • Arrange chunks of onion in a 4- to 6-quart oval slow cooker. Place beef on top of the onions. Pour lime juice mixture over the beef. Brush any remaining mixture from the bowl over the beef using a pastry brush. Sprinkle garlic on top.
  • Cover and simmer over low heat for 8 to 9 hours.
  • Transfer the beef from the slow cooker to a large plate. Use 2 forks to shred the beef. Return the shredded beef to the slow cooker and stir well to combine with the sauce. Serve hot.
