Delicious vegan carrot salad for all to savor.
Ingredients:
  • 24.00 gm sesame seeds
  • 3 medium (about 360g) organic carrots (Absolute Organic brand), peeled, cut into matchsticks
  • 85g (1 1/4 cups) fresh bean sprouts, washed, dried
  • 60ml (1/4 cup) fresh lemon juice
  • 18.20 gm peanut oil
  • 20.00 ml sesame oil
  • 3 tsp finely grated fresh organic ginger (Absolute Organic brand)
  • 8.00 gm brown sugar
Instructions:
  • Toast sesame seeds in a non-stick pan over medium heat, stirring, for 2-3 minutes until lightly golden. Set aside.
  • Mix together fresh lemon juice, flavorful peanut oil, aromatic sesame oil, zesty ginger, and sweet sugar in a pitcher. Adjust the seasoning with a touch of salt and pepper to taste.
  • Combine the toasted sesame seeds, carrot, and bean sprouts in a bowl. Drizzle with dressing and gently toss to mix well. Portion the salad into bowls and serve promptly.
